The way we perceive and drink coffee has changed radically in recent years. But where does this shift come from, with pure consumption taking a back seat and conscious enjoyment taking center stage? The answer lies in the three "waves" of modern coffee history. In the First Wave (approximately 1930-1960), coffee became a pure consumer good, primarily concerned with availability rather than quality. In the Second Wave, large coffeehouse chains and to-go cups transformed it into a global lifestyle product for on-the-go consumption, whose actual taste, however, was often lost behind lots of milk, sugar, and syrup. The Third Wave, which we are experiencing today, is a conscious countermovement to all of this. It celebrates coffee as a high-quality luxury item, similar to wine or fine chocolate. The focus is on transparency along the entire value chain—from fair, sustainable conditions for the coffee farmers and precise origin to artisanal roasting that precisely highlights the unique flavor diversity of a variety rather than masking it. In order to not only have a say in this new world, but also to be able to taste it, you need the right background knowledge, which we will teach you step by step in our online course.
