In 2023, the Paragon, a revolutionary device for improving coffee preparation, was launched. Volatile aroma compounds play a crucial role in taste perception. Normally, they evaporate quickly, filling the air with the aroma of coffee. However, research at the ZHAW has shown that the Paragon preserves up to 40% more of these volatile aroma compounds in the finished coffee than conventional refrigerated methods. This increased concentration results in a more intense and richer flavor experience.
The Paragon utilizes patented extract cooling technology that significantly enhances the brewing experience. The cooling stone, a central element of the Paragon, is made of food-grade stainless steel and coated with highly durable titanium. Its spherical shape and large surface area allow for even and rapid cooling. The high-density liquid gel core offers greater heat capacity, maintains colder temperatures longer, and freezes faster than other alternatives.
The Paragon Espresso Chilling Rocks were specifically developed to enhance the flavor and workflow of espresso preparation. The Chilling Rocks, with a diameter of 30 mm, are smaller than the Paragon Filter Rocks and are specifically designed for espresso. This smaller size is ideal for the specific requirements of espresso preparation and helps streamline the workflow and maximize the flavor results.
